Chicken Fajitas on Rice

Chicken Fajitas on Rice


This recipe is delicious AND it was a recipe that my husband really enjoyed making. I give all the credit to him and express my gratitude for a husband who loves to cook as much as I do :)

Ingredients (serves 4):

  • 4 boneless, skinless chicken breasts
  • Fajita Seasoning (recipe ingredients below)
    • 1 Tbsp chili powder
    • 1 tsp cumin
    • 1 tsp paprika
    • 1/4 tsp cayenne pepper
    • 1/4 tsp garlic powder
    • 1 tsp salt
    • 1 tsp ground black pepper
  • Salt
  • 1 Medium Yellow Onion, sliced
  • 3 Large Bell Peppers, seeds and ribs removed, sliced
  • 2 Tbsp Vegetable Oil
  • 4 Cups White Rice, Cooked
  • 1 Lemon, zested and juiced
  • 1/3 C Cilantro, chopped (and a little extra for topping)
  • ground black pepper
  • 2 Avocados, halved and sliced
  • 2 Green Onions, chopped

Fajita Instructions:

  1. Preheat the oven to 350 degrees.
  2. Coat each side of the chicken with the fajita seasoning mixture and season with salt. Set aside.
  3. Heat a large skillet (or even a wok) over medium heat and add 1 Tbsp vegetable oil. Add onions and peppers and sauté for 10-12 minutes, or until tender. Place in bowl and cover with foil to keep warm.
  4. Increase temperature to med-high heat and add remaining 1 Tbsp vegetable oil. Add chicken breasts and cook until browned on both sides. Place chicken in a baking dish and cook for 10 minutes, or until cooked all the way through.
  5. While the chicken cooks, start cooking your white rice (unless you've already done that ahead of time). 
  6. Remove Chicken and cover baking dish with foil. Set aside.
  7. In skillet, add rice. Cover and cook 5 minutes, stirring frequently, until lightly browned. Add lemon zest and season with salt and pepper to taste. Remove from heat and place in medium bowl. Toss with cilantro and add lemon juice, a teaspoon as a time, to your liking.
  8. Place rice into bowls and top with peppers and onions. Slice chicken and add to bowl. Garnish with avocado slices, extra cilantro, and green onions. 
  9. Serve immediately and enjoy the fiesta in your mouth!
