Lemon Chicken Skillet

This is definitely one of our family favorites. The best part is that it is so easy!


Ingredients:


Lemon Rub:
  • 1 Tbsp Olive Oil
  • 1 Tbsp Mustard
  • 1 tsp Lemon Zest
  • 1 1/2 tsp Dried Oregano
  • 1/2 tsp Dried Thyme
  • 1/4 tsp Salt
  • 8 Chicken Thighs (w/Bone and Skin)
  • 1 1/4 Cup Chicken Stock
  • 1/4 Cup Fresh Lemon Juice
  • 2 tsp Lemon Zest
  • 1 Tbsp Olive Oil

Directions:

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Combine olive oil and spices for lemon rub in a small bowl. Brush lemon rub on both sides of chicken and set chicken aside.
  3. In a large bowl, whisk chicken stock, lemon juice, and lemon zest. Set aside.
  4. Heat olive oil in a large oven-proof skillet (or regular skillet) oven medium-high heat. Add chicken, skin-side down, and sear both sides until golden brown on each side.
  5. If using a regular skillet, transfer chicken to 9x13 baking dish and add chicken stock mixture. Place skillet or dish into oven and roast until cooked through, about 25-30 minutes (or chicken is at 175 degrees). 
  6. Serve immediately with your favorite sides and enjoy!
