This is definitely one of our family favorites. The best part is that it is so easy!
Ingredients:
Lemon Rub:
- 1 Tbsp Olive Oil
- 1 Tbsp Mustard
- 1 tsp Lemon Zest
- 1 1/2 tsp Dried Oregano
- 1/2 tsp Dried Thyme
- 1/4 tsp Salt
- 8 Chicken Thighs (w/Bone and Skin)
- 1 1/4 Cup Chicken Stock
- 1/4 Cup Fresh Lemon Juice
- 2 tsp Lemon Zest
- 1 Tbsp Olive Oil
Directions:
- Preheat oven to 400 degrees Fahrenheit.
- Combine olive oil and spices for lemon rub in a small bowl. Brush lemon rub on both sides of chicken and set chicken aside.
- In a large bowl, whisk chicken stock, lemon juice, and lemon zest. Set aside.
- Heat olive oil in a large oven-proof skillet (or regular skillet) oven medium-high heat. Add chicken, skin-side down, and sear both sides until golden brown on each side.
- If using a regular skillet, transfer chicken to 9x13 baking dish and add chicken stock mixture. Place skillet or dish into oven and roast until cooked through, about 25-30 minutes (or chicken is at 175 degrees).
- Serve immediately with your favorite sides and enjoy!
